In order to study the migration risk of acrylonitrile in different simulated substances with different materials, the migration amount of acrylonitrile was determined by headspace gas chromatography by selecting 63 representative samples. The experimental results show that among different materials, AS plastic has the highest detection rate (47.1%). Among different simulants, 50% ethanol has the highest detection rate (20.0%) and can be used as the most stringent food simulant screening product, while cutting treatment has a significant impact on the migration of acrylonitrile.
